Dee Andronico's Herb Dressing

  • 1 (14-16-ounce package) Pepperidge Farm Stuffing Mix
  • 1/2 cup golden raisins, soaked
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/4 cup grated carrot
  • 1 stick clarified butter
  • 4 tablespoons chopped parsley
  • 1 Red Delicious apple, peeled, cored and chopped
  • 1/4 cup walnuts, coarsely chopped
  • 1/4 cup Kasseri Cheese (or Parmesan)
  • 1 cup chicken stock

  1. Soak raisins in hot water for 30 minutes, to plump. Drain. Saute onion, celery and carrots in butter until mixture sweats. Add the chopped parsley.
  2. In a large bowl, combine all ingredients except chicken stock. Moisten ingredients with the chicken stock until desired consistency is reached. Use to stuff your turkey, or bake in a casserole dish in a 325F oven until the stuffing is crispy on the outside.
