Dee Andronico's Herb Dressing
- 1 (14-16-ounce package) Pepperidge Farm Stuffing Mix
- 1/2 cup golden raisins, soaked
- 1 cup chopped onion
- 1 cup chopped celery
- 1/4 cup grated carrot
- 1 stick clarified butter
- 4 tablespoons chopped parsley
- 1 Red Delicious apple, peeled, cored and chopped
- 1/4 cup walnuts, coarsely chopped
- 1/4 cup Kasseri Cheese (or Parmesan)
- 1 cup chicken stock
- Soak raisins in hot water for 30 minutes, to plump. Drain. Saute onion, celery and carrots in butter until mixture sweats. Add the chopped parsley.
- In a large bowl, combine all ingredients except chicken stock. Moisten ingredients with the chicken stock until desired consistency is reached. Use to stuff your turkey, or bake in a casserole dish in a 325F oven until the stuffing is crispy on the outside.
